Honesty first: the famous fish market is aimed almost entirely at visitors these days, and the prices say so. Locals buy their fish elsewhere. Still, it sits right where you'll be walking anyway, between Bryggen and the funicular, and on a summer day the outdoor stalls are a pleasant spot to eat something from the sea while the harbour goes about its business. No planning needed. Think of it as scenery that happens to sell prawns.
